These Easy Homemade Granola Bars are no-bake, chewy, and packed with peanut butter and chocolate chips for a delicious snack or breakfast on the go.

- 1 cup Peanut butter (creamy or chunky)
- 1/2 cup Honey
- 2 1/2 cups Old fashioned rolled oats
- 1/4 cup Shredded coconut
- 1/3 cup Mini chocolate chips (or any other add-ins of your choice)
- 1/4 cup Melted chocolate (for drizzling)
Instructions
- In a microwave-safe mixing bowl, combine peanut butter and honey. Heat in the microwave in 20-second increments until the peanut butter has fully melted. Stir the mixture until it becomes smooth and well combined.
- Add the rolled oats and shredded coconut to the melted peanut butter and honey mixture. Stir thoroughly until all the dry ingredients are evenly incorporated.
- Stir in the mini chocolate chips or your preferred add-ins, ensuring they are evenly distributed throughout the mixture.
- Pour the granola mixture into an 8×8 inch square pan lined with wax paper. Spread the mixture evenly.
- Use your hands or the flat bottom of a measuring cup to press the mixture firmly and evenly into the pan, compacting it tightly.
- Cover the pan with plastic wrap or foil, then refrigerate overnight or until the granola mixture firms up completely.
- Remove the chilled granola from the pan and use a sharp knife to cut it into 10 bars.
- If desired, drizzle each bar with melted chocolate. Let the chocolate set and harden before serving.
