Description

Unbelievable Blueberry French Toast Casserole – The Ultimate Easy Breakfast Recipe

Ingredients

Scale
  • 8 slices of thick-cut bread (such as challah, brioche, or French bread)
  • 1 ½ cups fresh blueberries (or frozen if fresh is not available)
  • 6 large eggs
  • 2 cups whole milk
  • ½ cup heavy cream
  • ½ cup maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons unsalted butter (melted, for greasing)
  • Powdered sugar (for dusting, optional)
  • For the topping:
  • 1/3 cup brown sugar
  • 2 tablespoons cold butter (cut into small pieces)
  • 1 tablespoon all-purpose flour

Instructions

  1. Start by slicing your bread into cubes. Cut them into 1-inch cubes.
  2. In a large mixing bowl, whisk together the eggs, milk, heavy cream, maple syrup, cinnamon, vanilla extract, and a pinch of salt until well combined.
  3. Butter your 9×13-inch baking dish with the melted butter. Place the bread cubes into the baking dish, spreading them out evenly.
  4. Gently pour the custard mixture over the bread cubes, ensuring all pieces are coated. Press the bread into the liquid with a rubber spatula.
  5. Add the blueberries over the top of the bread mixture, gently pressing them into the bread.
  6. Cover the baking dish with plastic wrap and refrigerate it overnight (or for at least 4 hours).
  7. Make the crumbly topping by combining the brown sugar, cold butter, and flour in a small bowl. Mix until it resembles coarse crumbs.
  8. Preheat your oven to 350°F (175°C). Remove the casserole from the fridge and let it sit at room temperature for about 10 minutes.
  9. Bake for 45-50 minutes, or until golden brown on top and a knife inserted in the center comes out clean.
  10. Let the casserole cool for a few minutes. Dust with powdered sugar if desired, and serve with extra maple syrup.

Notes

  • Assemble the dish the night before for ease.
  • Use fresh or frozen blueberries based on availability.
  • Adjust baking time based on your oven’s performance.
