Description
Unbelievable Blueberry French Toast Casserole – The Ultimate Easy Breakfast Recipe
Ingredients
Scale
- 8 slices of thick-cut bread (such as challah, brioche, or French bread)
- 1 ½ cups fresh blueberries (or frozen if fresh is not available)
- 6 large eggs
- 2 cups whole milk
- ½ cup heavy cream
- ½ cup maple syrup
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons unsalted butter (melted, for greasing)
- Powdered sugar (for dusting, optional)
- For the topping:
- 1/3 cup brown sugar
- 2 tablespoons cold butter (cut into small pieces)
- 1 tablespoon all-purpose flour
Instructions
- Start by slicing your bread into cubes. Cut them into 1-inch cubes.
- In a large mixing bowl, whisk together the eggs, milk, heavy cream, maple syrup, cinnamon, vanilla extract, and a pinch of salt until well combined.
- Butter your 9×13-inch baking dish with the melted butter. Place the bread cubes into the baking dish, spreading them out evenly.
- Gently pour the custard mixture over the bread cubes, ensuring all pieces are coated. Press the bread into the liquid with a rubber spatula.
- Add the blueberries over the top of the bread mixture, gently pressing them into the bread.
- Cover the baking dish with plastic wrap and refrigerate it overnight (or for at least 4 hours).
- Make the crumbly topping by combining the brown sugar, cold butter, and flour in a small bowl. Mix until it resembles coarse crumbs.
- Preheat your oven to 350°F (175°C). Remove the casserole from the fridge and let it sit at room temperature for about 10 minutes.
- Bake for 45-50 minutes, or until golden brown on top and a knife inserted in the center comes out clean.
- Let the casserole cool for a few minutes. Dust with powdered sugar if desired, and serve with extra maple syrup.
Notes
- Assemble the dish the night before for ease.
- Use fresh or frozen blueberries based on availability.
- Adjust baking time based on your oven’s performance.
