Description
Copycat Bob Evans Cherry Bread is a soft, tender, and moist quick bread loaded with maraschino cherries and topped with a glossy pink glaze.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ¾ cup maraschino cherry juice (from the jar)
- 2 large eggs
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- 1 cup maraschino cherries, chopped (reserve extra for garnish)
- 1 cup powdered sugar
- 1–2 tablespoons maraschino cherry juice
- ½ teaspoon almond extract (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk together cherry juice, eggs, oil, vanilla, and almond extract until smooth.
- Pour wet ingredients into dry and stir gently until just combined. Do not overmix.
- Chop cherries and fold into batter. The batter will have a light pink hue.
- Pour batter into prepared pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10–15 minutes, then remove and cool fully on a wire rack.
- Whisk powdered sugar with cherry juice to form a glaze. Drizzle over cooled loaf and let set before slicing.
