Description

Copycat Bob Evans Cherry Bread is a soft, tender, and moist quick bread loaded with maraschino cherries and topped with a glossy pink glaze.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup maraschino cherry juice (from the jar)
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 cup maraschino cherries, chopped (reserve extra for garnish)
  • 1 cup powdered sugar
  • 12 tablespoons maraschino cherry juice
  • ½ teaspoon almond extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together cherry juice, eggs, oil, vanilla, and almond extract until smooth.
  4. Pour wet ingredients into dry and stir gently until just combined. Do not overmix.
  5. Chop cherries and fold into batter. The batter will have a light pink hue.
  6. Pour batter into prepared pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10–15 minutes, then remove and cool fully on a wire rack.
  8. Whisk powdered sugar with cherry juice to form a glaze. Drizzle over cooled loaf and let set before slicing.
