- 1 whole chicken (about 3–4 pounds)
- 4 quarts water
- 2 medium carrots, sliced
- 1 celery stalk, chopped
- 1 onion, quartered
- 3 cloves garlic, crushed
- 1 bay leaf
- 1 teaspoon black peppercorns
- Salt, to taste
- 8 ounces egg noodles
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse the chicken under cold water and remove any giblets from the cavity.
- Place the chicken in a large pot and cover it with 4 quarts of water.
- Add the sliced carrots, chopped celery, quartered onion, crushed garlic, bay leaf, and black peppercorns to the pot.
- Bring the pot to a boil over medium-high heat. Reduce heat to low, cover, and simmer for about 1 hour.
- Check the chicken to ensure it is fully cooked, reaching an internal temperature of 165°F (75°C).
- Carefully remove the chicken from the pot and place it on a cutting board to cool slightly.
- Strain the broth through a fine-mesh sieve or cheesecloth into another pot.
- Once the chicken is cool enough to handle, shred the meat from the bones and discard the bones and skin.
- Add the shredded chicken back to the strained broth.
- Bring the broth back to a gentle boil. Add the egg noodles and cook according to package instructions until al dente.
- Taste the soup and add salt as needed.
- Ladle the soup into bowls and top with freshly chopped parsley for garnish.

- Use fresh herbs like thyme or rosemary for an enhanced flavor.
- Adjust salt to your taste preference.
- For a quicker version, use pre-cooked rotisserie chicken.
