Description

Brodo di Pollo, or Italian Noodle Soup, is a comforting and nourishing dish. This recipe provides a simple way to create a flavorful chicken broth with tender chicken and delicate noodles, perfect for any occasion. It’s a versatile and family-friendly meal that can be prepared ahead of time.


Ingredients

  • 1 whole chicken (about 34 pounds)
  • 4 quarts water
  • 2 medium carrots, sliced
  • 1 celery stalk, chopped
  • 1 onion, quartered
  • 3 cloves garlic, crushed
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • Salt, to taste
  • 8 ounces egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the chicken under cold water and remove any giblets from the cavity.
  2. Place the chicken in a large pot and cover it with 4 quarts of water.
  3. Add the sliced carrots, chopped celery, quartered onion, crushed garlic, bay leaf, and black peppercorns to the pot.
  4. Bring the pot to a boil over medium-high heat. Reduce heat to low, cover, and simmer for about 1 hour.
  5. Check the chicken to ensure it is fully cooked, reaching an internal temperature of 165°F (75°C).
  6. Carefully remove the chicken from the pot and place it on a cutting board to cool slightly.
  7. Strain the broth through a fine-mesh sieve or cheesecloth into another pot.
  8. Once the chicken is cool enough to handle, shred the meat from the bones and discard the bones and skin.
  9. Add the shredded chicken back to the strained broth.
  10. Bring the broth back to a gentle boil. Add the egg noodles and cook according to package instructions until al dente.
  11. Taste the soup and add salt as needed.
  12. Ladle the soup into bowls and top with freshly chopped parsley for garnish.

  • For a quicker version, use pre-cooked rotisserie chicken.
