- 1 pound Brussels sprouts, trimmed and halved
- 1 tablespoon avocado oil (or olive oil)
- Salt and black pepper, to taste
- 2–3 ounces blue cheese, crumbled
- Optional: Toothpicks for serving
Instructions
- Set oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Trim ends, halve each sprout, and toss with avocado oil, salt, and pepper.
- Arrange cut-side down on the sheet and roast for 20–25 minutes, flipping halfway, until golden and crispy.
- Remove from oven and top each warm sprout half with a crumble of blue cheese.
- Let the cheese soften slightly, then transfer to a serving platter and add toothpicks if desired.
- Enjoy warm as a flavorful, bite-sized appetizer.
