Ingredients

  • 2 lobster tails
  • 1 cup Arborio rice
  • 4 cups vegetable stock
  • 1/2 cup white wine
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat vegetable stock until warm.
  2. In another pot, melt butter and add lobster tails, cooking until opaque.
  3. Remove lobster and add rice to the remaining butter, toasting for 2 minutes.
  4. Add white wine and cook until absorbed.
  5. Gradually add warmed stock, stirring until absorbed, about 18-20 minutes.
  6. Stir in heavy cream, lobster meat, and parsley before serving.
  7. Season with salt and pepper to taste.

Notes

For a more intense flavor, add a splash of lemon juice or garlic while stirring in the lobster.
