- 2 lobster tails
- 1 cup Arborio rice
- 4 cups vegetable stock
- 1/2 cup white wine
- 1/4 cup unsalted butter
- 1/4 cup heavy cream
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a saucepan, heat vegetable stock until warm.
- In another pot, melt butter and add lobster tails, cooking until opaque.
- Remove lobster and add rice to the remaining butter, toasting for 2 minutes.
- Add white wine and cook until absorbed.
- Gradually add warmed stock, stirring until absorbed, about 18-20 minutes.
- Stir in heavy cream, lobster meat, and parsley before serving.
- Season with salt and pepper to taste.
Notes
For a more intense flavor, add a splash of lemon juice or garlic while stirring in the lobster.
