Description

A quick and creamy twist on the classic Philly cheesesteak sandwich served as a weeknight pasta dish.


Ingredients

  • 450 g (1 lb) thinly sliced beef (top round, flank, or skirt steak)
  • 500 g (1 lb) refrigerated cheese tortellini
  • 1 medium yellow onion, thinly sliced (about 150 g / 1 cup)
  • 2 cloves garlic, minced (about 6 g)
  • 30 g (2 tbsp) unsalted butter
  • 30 ml (2 tbsp) olive oil
  • 240 ml (1 cup) low-sodium beef broth
  • 120 ml (1/2 cup) heavy cream
  • 120 g (4 oz) provolone cheese, shredded or sliced
  • 60 g (2 oz) American-style cheese or processed cheese slices
  • 15 g (1 tbsp) Worcestershire sauce
  • 5 g (1 tsp) Dijon mustard
  • 5 g (1 tsp) kosher salt
  • 2 g (1/2 tsp) black pepper, freshly ground
  • Optional: 1 green bell pepper, thinly sliced (80–100 g / 1/2 cup)

Instructions

  1. Prep the steak and tortellini: Pat beef dry and slice thinly across the grain. Season with salt and pepper. Bring tortellini to room temperature.
  2. Caramelize onions and peppers: Heat butter and olive oil in the skillet over medium heat. Add onion and pepper; sauté until soft and golden, about 7–9 minutes.
  3. Sear the steak: Increase heat to medium-high. Add a thin slick of oil and spread the beef evenly. Sear for 1–2 minutes until browned but slightly pink.
  4. Build the sauce: Lower heat to medium. Return onions and peppers to the pan. Add garlic, beef broth, and heavy cream; simmer for 3–4 minutes until slightly reduced.
  5. Add pasta and cheese: Stir in tortellini and cook for 2–3 minutes. Remove from heat and mix in provolone and American cheese until melted.
  6. Finish and rest: Taste and adjust salt. Let the dish rest for 2 minutes to thicken before serving.

Notes

Thin slices of beef are key to keeping them tender. Do not overcook the tortellini to maintain texture.
