- 1 crusty round country loaf or sourdough (8–10 inches wide)
- 1/2 cup unsalted butter, melted
- 3 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh chives (optional)
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes (optional)
- 8 ounces fresh mozzarella, cut into small pieces or thin strips
- 1/2 cup grated Parmesan cheese
Instructions
- Heat oven to 375°F (190°C). Line a baking sheet with foil.
- Place the loaf on a cutting board. Use a serrated knife to cut a crisscross pattern, about 1-inch wide cubes, without slicing through the base.
- In a bowl, mix melted butter, garlic, parsley, chives, salt, and red pepper flakes.
- Gently pull apart the bread sections and insert mozzarella and Parmesan evenly throughout the loaf.
- Spoon or brush the butter mixture into the crevices and over the top.
- Loosely wrap the loaf in foil and place on the baking sheet. Bake for 15 minutes.
- Remove foil and bake another 10 minutes until the cheese is melted and the top is golden.
- Enjoy warm and pull apart pieces to serve.
