Ingredients

  • 1 crusty round country loaf or sourdough (810 inches wide)
  • 1/2 cup unsalted butter, melted
  • 3 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives (optional)
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 8 ounces fresh mozzarella, cut into small pieces or thin strips
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat oven to 375°F (190°C). Line a baking sheet with foil.
  2. Place the loaf on a cutting board. Use a serrated knife to cut a crisscross pattern, about 1-inch wide cubes, without slicing through the base.
  3. In a bowl, mix melted butter, garlic, parsley, chives, salt, and red pepper flakes.
  4. Gently pull apart the bread sections and insert mozzarella and Parmesan evenly throughout the loaf.
  5. Spoon or brush the butter mixture into the crevices and over the top.
  6. Loosely wrap the loaf in foil and place on the baking sheet. Bake for 15 minutes.
  7. Remove foil and bake another 10 minutes until the cheese is melted and the top is golden.
  8. Enjoy warm and pull apart pieces to serve.
