Description

These Chicken Bell Pepper Burritos are a quick and easy weeknight meal. Juicy seasoned chicken and tender sautéed bell peppers are wrapped in warm tortillas with rice, ranch dressing, and cheddar cheese. A toasted exterior adds a slight crisp.   • 1 lb boneless, skinless chicken breast, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup shredded cheddar cheese
  • ½ cup ranch dressing
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • Salt and black pepper to taste
  • ¼ cup fresh cilantro, chopped (optional)

Instructions

  1. Toss the chicken strips with garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add the sliced red and green bell peppers to the same skillet. Cook until tender-crisp, about 5 minutes.
  4. Return the chicken to the skillet with the peppers. Stir to combine.
  5. Warm the flour tortillas according to package directions.
  6. To assemble the burritos, lay a warm tortilla flat. Spread a layer of ranch dressing down the center.
  7. Top with cooked rice, the chicken and pepper mixture, shredded cheddar cheese, and chopped cilantro (if using).
  8. Fold in the sides of the tortilla, then tightly roll up from the bottom to create a burrito.
  9. Place the burritos seam-side down in the skillet. Cook for 1-2 minutes per side, until golden brown and slightly crisp.
  10. Serve your Chicken Bell Pepper Burritos immediately.
