Ingredients

  • 2 pieces of flatbread or naan (store-bought or homemade)
  • 1 cup cooked chicken breast, chopped or shredded
  • ½ cup pesto sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • ½ cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • 1 tablespoon olive oil
  • ¼ teaspoon sea salt
  • Fresh basil leaves, for garnish
  • Optional: red pepper flakes, arugula, or balsamic glaze

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Place flatbreads on the prepared baking sheet. Spread pesto sauce evenly over each piece, leaving a small border.
  3. Top each flatbread with chopped cooked chicken, mozzarella cheese, cherry tomatoes, and red onion slices. Drizzle with olive oil and sprinkle with sea salt.
  4. Bake for 8–10 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.
