- 1 cup cooked chicken breast, chopped or shredded
- ½ cup pesto sauce (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- ½ cup cherry tomatoes, halved
- ¼ red onion, thinly sliced
- 1 tablespoon olive oil
- ¼ teaspoon sea salt
- Fresh basil leaves, for garnish
- Optional: red pepper flakes, arugula, or balsamic glaze
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Place flatbreads on the prepared baking sheet. Spread pesto sauce evenly over each piece, leaving a small border.
- Top each flatbread with chopped cooked chicken, mozzarella cheese, cherry tomatoes, and red onion slices. Drizzle with olive oil and sprinkle with sea salt.
- Bake for 8–10 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.
- Remove from oven, let cool slightly, and garnish with fresh basil and optional red pepper flakes or arugula. Slice and serve immediately.
