Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 4 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 avocado, sliced
  • 1/2 cup corn (fresh or frozen)
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder

Instructions

  1. In a bowl, combine parsley, cilantro, minced garlic, olive oil, red wine vinegar, red pepper flakes, salt, and pepper. Mix well and set aside.
  2. Place the chicken breasts in a resealable bag or bowl. Pour half of the chimichurri sauce over the chicken. Seal or cover, and marinate for at least 30 minutes in the refrigerator.
  3. While the chicken is marinating, cook the rice or quinoa according to package instructions. Set aside.
  4. In a small bowl, mix mayonnaise, lemon juice, garlic powder, and a pinch of salt. Stir until smooth and set aside.
  5. Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side or until fully cooked and no longer pink in the center.
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing.
  7. In serving bowls, layer the cooked rice or quinoa, sliced grilled chicken, cherry tomatoes, cucumber, corn, and avocado.
  8. Drizzle the remaining chimichurri sauce over the bowls and add a generous dollop of garlic sauce on top.
