Ingredients

  • 1 pound Chicken Thighs (cut into bite-sized pieces)
  • 1 cup Panko Breadcrumbs (for crispy coating)
  • 2 large Eggs (as a binding agent)
  • 1/2 cup Peanut Butter (natural peanut butter recommended)
  • 1/3 cup Sweetened Condensed Milk (or honey/maple syrup)
  • 2 tablespoons Soy Sauce
  • 1/4 cup Water (to adjust sauce consistency)

Instructions

  1. Pat the chicken thighs dry with a paper towel and cut into bite-sized pieces.
  2. Mix the eggs with a spoonful of peanut butter to create the egg wash.
  3. Dip each chicken piece in the egg wash and coat with panko breadcrumbs.
  4. Heat oil to 350°F and fry the chicken for 5-7 minutes until crispy.
  5. In a saucepan, combine peanut butter, sweetened condensed milk, soy sauce, and water until smooth and warm.
  6. Toss the fried chicken in the peanut sauce until well coated.
  7. Serve with steamed jasmine rice or as finger food with sauce on the side.
