Crispy Chinese Peanut Butter Chicken for Quick Family Nights

- 1 pound Chicken Thighs (cut into bite-sized pieces)
- 1 cup Panko Breadcrumbs (for crispy coating)
- 2 large Eggs (as a binding agent)
- 1/2 cup Peanut Butter (natural peanut butter recommended)
- 1/3 cup Sweetened Condensed Milk (or honey/maple syrup)
- 2 tablespoons Soy Sauce
- 1/4 cup Water (to adjust sauce consistency)
Instructions
- Pat the chicken thighs dry with a paper towel and cut into bite-sized pieces.
- Mix the eggs with a spoonful of peanut butter to create the egg wash.
- Dip each chicken piece in the egg wash and coat with panko breadcrumbs.
- Heat oil to 350°F and fry the chicken for 5-7 minutes until crispy.
- In a saucepan, combine peanut butter, sweetened condensed milk, soy sauce, and water until smooth and warm.
- Toss the fried chicken in the peanut sauce until well coated.
- Serve with steamed jasmine rice or as finger food with sauce on the side.
