Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and well combined.
- Mix in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- For best results, cover the dough and refrigerate for at least 30 minutes.
- Once chilled, scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges look firm but the centers are still soft.
- Immediately after removing the cookies from the oven, gently press a chocolate kiss into the center of each cookie. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
