Description

This Baked Chocolate Brownie Oatmeal is a delicious and healthy twist on traditional oatmeal, combining the rich flavors of cocoa and chocolate chips with wholesome rolled oats.


Ingredients

  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1 1/2 cup almond milk
  • 1 tsp vanilla extract
  • 1 cup chocolate chips (reserve some for sprinkling on top)
  • Peanut butter
  • Whipped cream
  • Maple syrup
  • Nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan to prevent sticking.
  2. In a large bowl, combine the rolled oats, cocoa powder, baking powder, and salt, stirring until evenly mixed.
  3. In a separate medium bowl, whisk together the eggs, almond milk, maple syrup, melted coconut oil, and vanilla extract until smooth and well combined.
  4. Pour the wet mixture into the dry ingredients and stir thoroughly until the batter is combined without any dry spots.
  5. Fold in the chocolate chips evenly throughout the batter, then transfer it into the greased baking dish. Sprinkle the reserved chocolate chips on top for a melty chocolate finish.
  6. Bake in the preheated oven for 45 to 50 minutes or until the edges are set and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
  7. Allow the oatmeal to cool for about 10 minutes before slicing. Top with optional peanut butter, whipped cream, maple syrup, or nuts as desired and enjoy warm.
