Instructions
- If making homemade, mix flour and salt, cut in butter, add ice water, roll out, and place in pie dish. For store-bought, fit crust into dish and crimp edges.
- Bake at 375°F (190°C) for 8–10 minutes to prevent sogginess.
- Heat milk over low heat until steaming—do not boil.
- Whisk eggs, sugar, cinnamon, vanilla, nutmeg, and salt until smooth.
- Slowly whisk warm milk into egg mixture to prevent curdling.
- For ultra-smooth texture, strain custard through a mesh sieve.
- Pour custard into warm crust and bake at 325°F (165°C) for 35–45 minutes until center is slightly jiggly.
- Cool 1 hour on a rack, then refrigerate 3–4 hours before slicing.
