  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1 cup cranberry sauce (store-bought or homemade)
  • 1/2 cup onion, finely chopped
  • 1/4 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Fresh parsley for garnish (optional)

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. In a bowl, combine the cranberries, cranberry sauce, chopped onion, brown sugar, balsamic vinegar, minced garlic, salt, pepper, thyme, and paprika. Stir until well mixed.
  3. Pour the cranberry mixture over the chicken in the slow cooker, ensuring the chicken is well coated.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours. The chicken should be cooked through and tender.
  5. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (75°C).
  6. If desired, shred the chicken in the slow cooker using two forks and mix it into the sauce for a more cohesive dish.
  7. Sprinkle with fresh parsley before serving for a pop of color.
