Ingredients

  • 1 small onion, diced
  • 1 teaspoon minced garlic
  • 1 (28-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 (11-ounce) can corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (15-ounce) can chili beans with sauce
  • 1 packet taco seasoning mix
  • 1 packet ranch dressing mix
  • 23 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef with diced onion and minced garlic in a large pot over medium heat until fully cooked; drain excess fat.
  2. Add diced tomatoes, tomato sauce, corn, black beans, pinto beans, and chili beans to the pot.
  3. Stir in taco seasoning mix, ranch dressing mix, and chicken broth.
  4. Bring the soup to a boil, then reduce heat and simmer for 20-30 minutes to blend flavors.
  5. Season with salt and pepper to taste before serving.
  6. Serve hot with optional toppings such as shredded cheese, sour cream, avocado, cilantro, and tortilla chips.
