Description
These easy cranberry feta pinwheels feature flaky pastry wrapped around tangy feta and bright cranberries, making for an irresistible holiday appetizer.

- 450 g puff pastry (1 lb — two 9×12-inch sheets)
- 170 g fresh cranberries (6 oz, about 1½ cups), finely chopped
- 200 g feta cheese (7 oz, crumbled)
- 113 g cream cheese (4 oz, softened)
- 1 tsp lemon zest (from 1 small lemon)
- 15 ml honey (1 tbsp)
- 1 tbsp fresh thyme leaves (chopped) or 2 tsp dried thyme
- 1 large egg (beaten with 1 tsp water)
- Salt and black pepper, to taste
Instructions
- Remove puff pastry from the freezer and thaw in the fridge for 30–40 minutes until pliable but still cool.
- In a bowl, mix crumbled feta, softened cream cheese, chopped cranberries, honey, lemon zest, and thyme. Season with black pepper and taste before adding salt.
- On a lightly floured surface, roll each pastry sheet into a larger rectangle. Spread half the filling evenly on each, leaving a border.
- Roll each sheet from the long edge into a tight log and chill for 20 minutes.
- Preheat oven to 200°C (400°F). Slice each log into rounds, place on a parchment-lined baking sheet, and brush tops with beaten egg.
- Bake for 12–15 minutes until golden brown. Cool for 5 minutes before serving.
Notes
Chill the logs before slicing for clean cuts. Make these ahead by freezing the assembled logs for a month.
