Ingredients

  • 6 bone-in, skin-on chicken thighs (or drumsticks)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon paprika (optional)
  • 2 teaspoons fresh rosemary or thyme, chopped
  • 1 cup fresh or frozen whole cranberries
  • 1/2 cup fresh orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons honey or maple syrup
  • 2 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1/2 cup chicken broth or water
  • Optional: orange slices or extra cranberries for garnish

Instructions

  1. Pat chicken dry and season with salt, pepper, and paprika.
  2. Mix orange juice, zest, honey, garlic, mustard, and broth in a bowl.
  3. Heat oil in an oven-safe skillet over medium-high. Sear chicken skin-side down 5–6 minutes until golden, then flip.
  4. Pour glaze over chicken and scatter cranberries and herbs.
  5. Transfer skillet to a 400°F (200°C) oven and bake 25–30 minutes, basting once or twice.
  6. Rest 5 minutes, garnish with orange slices and extra cranberries, and serve warm.
