Juicy Cranberry Roast Beef – Perfect for Your Holiday Table

- 6 bone-in, skin-on chicken thighs (or drumsticks)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon paprika (optional)
- 2 teaspoons fresh rosemary or thyme, chopped
- 1 cup fresh or frozen whole cranberries
- 1/2 cup fresh orange juice
- 1 tablespoon orange zest
- 2 tablespoons honey or maple syrup
- 2 garlic cloves, minced
- 1 tablespoon Dijon mustard
- 1/2 cup chicken broth or water
- Optional: orange slices or extra cranberries for garnish
Instructions
- Pat chicken dry and season with salt, pepper, and paprika.
- Mix orange juice, zest, honey, garlic, mustard, and broth in a bowl.
- Heat oil in an oven-safe skillet over medium-high. Sear chicken skin-side down 5–6 minutes until golden, then flip.
- Pour glaze over chicken and scatter cranberries and herbs.
- Transfer skillet to a 400°F (200°C) oven and bake 25–30 minutes, basting once or twice.
- Rest 5 minutes, garnish with orange slices and extra cranberries, and serve warm.
