Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ½ tsp dried basil
  • ¼ tsp paprika
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tbsp cornstarch
  • 2 cups baby spinach
  • 16 oz potato gnocchi (shelf-stable or refrigerated)

Instructions

  1. Add chicken, carrots, celery, onion, garlic, and seasonings. Pour in chicken broth and stir to combine.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  3. Remove and shred with forks, then return to the crockpot.
  4. In a bowl, whisk heavy cream with cornstarch. Stir into the soup with gnocchi.
  5. Cover and cook on high for 30–45 minutes until gnocchi is tender and soup thickens.
  6. Stir in baby spinach and let it wilt for 5–10 minutes before serving.
  7. Ladle into bowls and enjoy warm with crusty bread or salad.
