Irresistible Creamy Crockpot Chicken Gnocchi Soup for Easy Dinners

- 1.5 lbs boneless skinless chicken breasts
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme
- ½ tsp dried basil
- ¼ tsp paprika
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tbsp cornstarch
- 2 cups baby spinach
- 16 oz potato gnocchi (shelf-stable or refrigerated)
Instructions
- Add chicken, carrots, celery, onion, garlic, and seasonings. Pour in chicken broth and stir to combine.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
- Remove and shred with forks, then return to the crockpot.
- In a bowl, whisk heavy cream with cornstarch. Stir into the soup with gnocchi.
- Cover and cook on high for 30–45 minutes until gnocchi is tender and soup thickens.
- Stir in baby spinach and let it wilt for 5–10 minutes before serving.
- Ladle into bowls and enjoy warm with crusty bread or salad.
