- 1 pound Italian sausage (mild or spicy, your choice)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound gnocchi
- 2 cups fresh spinach
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
Instructions
- In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a spoon as it cooks. Remove and set aside, leaving some fat in the pot.
- In the same pot, add olive oil if needed. Add diced onion, carrots, and celery. Sauté for about 5 minutes, until the vegetables are tender. Stir in minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth. Bring to a boil, then reduce the heat to simmer.
- Stir in the gnocchi and cooked sausage. Let it simmer for about 3-5 minutes, or until the gnocchi float to the top.
- Add the heavy cream, oregano, thyme, salt, and pepper. Stir well and simmer for another 2-3 minutes.
- Add the fresh spinach and cook until wilted, about 2 minutes.
- Remove from heat and ladle the soup into bowls. Top with grated Parmesan cheese if desired.
