Description

Creamy Italian Sausage Gnocchi Soup is a rich and hearty dish perfect for any occasion.


Ingredients

  • 1 pound Italian sausage (mild or spicy, your choice)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a spoon as it cooks. Remove and set aside, leaving some fat in the pot.
  2. In the same pot, add olive oil if needed. Add diced onion, carrots, and celery. Sauté for about 5 minutes, until the vegetables are tender. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Pour in the chicken broth. Bring to a boil, then reduce the heat to simmer.
  4. Stir in the gnocchi and cooked sausage. Let it simmer for about 3-5 minutes, or until the gnocchi float to the top.
  5. Add the heavy cream, oregano, thyme, salt, and pepper. Stir well and simmer for another 2-3 minutes.
  6. Add the fresh spinach and cook until wilted, about 2 minutes.
  7. Remove from heat and ladle the soup into bowls. Top with grated Parmesan cheese if desired.
