- 1 pound beef stew meat, cut into bite-sized pieces
- 1 cup pearl barley
- 4 cups beef broth
- 2 cups water
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- Optional: 1 cup frozen peas or corn
Instructions
- Season the beef stew meat with salt and pepper.
- Sear the beef (optional): In a skillet over medium heat, brown the beef for 2-3 minutes on each side for added flavor.
- Add ingredients to the crockpot: Place the beef, pearl barley, beef broth, water, onion, carrots, celery, garlic, thyme, rosemary, and bay leaf in the crockpot.
- Stir to combine: Mix all the ingredients well to ensure even distribution.
- Set the temperature: Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- Add optional vegetables: In the last 30 minutes of cooking, stir in frozen peas or corn if desired.
- Taste and adjust seasoning: Before serving, taste the soup and adjust seasoning as needed.
- Remove bay leaf: Don’t forget to take out the bay leaf before serving.
- Serve warm: Ladle the soup into bowls and enjoy!
