Ingredients

  • 1 pound beef stew meat, cut into bite-sized pieces
  • 1 cup pearl barley
  • 4 cups beef broth
  • 2 cups water
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Optional: 1 cup frozen peas or corn

Instructions

  1. Season the beef stew meat with salt and pepper.
  2. Sear the beef (optional): In a skillet over medium heat, brown the beef for 2-3 minutes on each side for added flavor.
  3. Add ingredients to the crockpot: Place the beef, pearl barley, beef broth, water, onion, carrots, celery, garlic, thyme, rosemary, and bay leaf in the crockpot.
  4. Stir to combine: Mix all the ingredients well to ensure even distribution.
  5. Set the temperature: Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  6. Add optional vegetables: In the last 30 minutes of cooking, stir in frozen peas or corn if desired.
  7. Taste and adjust seasoning: Before serving, taste the soup and adjust seasoning as needed.
  8. Remove bay leaf: Don’t forget to take out the bay leaf before serving.
  9. Serve warm: Ladle the soup into bowls and enjoy!
