This Dill Pickle Parmesan Chicken Recipe is crispy, tangy, and unbelievably juicy thanks to a dill pickle brine that tenderizes the chicken while infusing it with flavor. Coated in a golden parmesan-breadcrumb crust and baked to perfection, this easy dinner is a weeknight hero and crowd favorite.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs (about 1.5 lbs / 680g)
  • 1 cup dill pickle juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 3/4 cup grated parmesan cheese
  • 1/2 cup seasoned breadcrumbs (or panko)
  • 2 tablespoons chopped fresh parsley (optional)
  • Olive oil spray or 2 tablespoons olive oil

Instructions

  1. Place chicken in a dish or zip-top bag and pour pickle juice over it. Marinate 30 minutes to 4 hours.
  2. Heat oven to 425°F (220°C). Line a baking sheet and place a wire rack on top if using.
  3. Mix parmesan, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
  4. Remove from marinade, pat dry thoroughly, and dredge each piece in the parmesan mixture.
  5. Place chicken on prepared sheet, spray/drizzle lightly with oil, and bake 20–25 minutes until golden and internal temp reaches 165°F (74°C).
  6. Let rest 5 minutes. Garnish with fresh parsley and serve hot.
