- 4 boneless, skinless chicken breasts or thighs (about 1.5 lbs / 680g)
- 1 cup dill pickle juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 3/4 cup grated parmesan cheese
- 1/2 cup seasoned breadcrumbs (or panko)
- 2 tablespoons chopped fresh parsley (optional)
- Olive oil spray or 2 tablespoons olive oil
Instructions
- Place chicken in a dish or zip-top bag and pour pickle juice over it. Marinate 30 minutes to 4 hours.
- Heat oven to 425°F (220°C). Line a baking sheet and place a wire rack on top if using.
- Mix parmesan, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
- Remove from marinade, pat dry thoroughly, and dredge each piece in the parmesan mixture.
- Place chicken on prepared sheet, spray/drizzle lightly with oil, and bake 20–25 minutes until golden and internal temp reaches 165°F (74°C).
- Let rest 5 minutes. Garnish with fresh parsley and serve hot.
