  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: 3 tablespoons softened cream cheese
  • For the Chocolate Frosting: 1/2 cup butter, softened
  • 1 3/4 cups powdered sugar
  • 1/4 cup cocoa powder
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • Optional Decorations: Powdered sugar
  • Fresh berries
  • Chocolate shavings
  • Rosemary sprigs
  • Meringue mushrooms

Instructions

  1. Line a 10×15 jelly roll pan with parchment paper and preheat the oven to 350°F (175°C).
  2. Beat eggs and sugar for 4–5 minutes until pale, thick, and fluffy.
  3. Mix gently to combine.
  4. Sift flour, cocoa powder, baking powder, and salt. Fold into egg mixture gently.
  5. Pour batter into the pan and spread evenly.
  6. Bake for 10–12 minutes or until the cake springs back when touched.
  7. While warm, invert onto a clean towel, peel parchment, and roll the cake with the towel inside. Cool completely.
  8. Whip cream, powdered sugar, and vanilla until medium peaks form.
  9. Unroll cooled sponge, spread filling evenly, then roll again.
  10. Cover with chocolate frosting and use a fork to create bark-like lines.
  11. Dust with powdered sugar and garnish with berries or greenery.
