Instructions
- Line a 10×15 jelly roll pan with parchment paper and preheat the oven to 350°F (175°C).
- Beat eggs and sugar for 4–5 minutes until pale, thick, and fluffy.
- Mix gently to combine.
- Sift flour, cocoa powder, baking powder, and salt. Fold into egg mixture gently.
- Pour batter into the pan and spread evenly.
- Bake for 10–12 minutes or until the cake springs back when touched.
- While warm, invert onto a clean towel, peel parchment, and roll the cake with the towel inside. Cool completely.
- Whip cream, powdered sugar, and vanilla until medium peaks form.
- Unroll cooled sponge, spread filling evenly, then roll again.
- Cover with chocolate frosting and use a fork to create bark-like lines.
- Dust with powdered sugar and garnish with berries or greenery.
