Description
Eggnog Thumbprint Cookies are buttery, soft cookies filled with a sweet, spiced icing made with powdered sugar and spiced rum, then dusted with ground nutmeg.

- ½ cup granulated sugar
- ¼ cup packed light brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon salt
- ¼ cup butter, softened
- 1 cup powdered sugar
- 1 tablespoon Captain Morgan Spiced Rum
- ground nutmeg, as needed
Instructions
- Cream together ¾ cup softened butter, granulated sugar, and light brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- Mix in the all-purpose flour and salt until just combined to form a soft dough.
- Portion the dough into 28 small balls and press your thumb into the center of each ball.
- Preheat the oven to 350°F (175°C) and bake the cookies for about 12 minutes.
- Let cool completely on a wire rack.
- Beat together ¼ cup softened butter, powdered sugar, and Captain Morgan Spiced Rum until smooth.
- Spoon or pipe the icing into each thumbprint well and dust with ground nutmeg.
- Allow the filling to set before serving.
- Store cookies in an airtight container.
