Description

Eggnog Thumbprint Cookies are buttery, soft cookies filled with a sweet, spiced icing made with powdered sugar and spiced rum, then dusted with ground nutmeg.


Ingredients

  • ¾ cup butter, softened
  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ¼ cup butter, softened
  • 1 cup powdered sugar
  • 1 tablespoon Captain Morgan Spiced Rum
  • ground nutmeg, as needed

Instructions

  1. Cream together ¾ cup softened butter, granulated sugar, and light brown sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until fully combined.
  3. Mix in the all-purpose flour and salt until just combined to form a soft dough.
  4. Portion the dough into 28 small balls and press your thumb into the center of each ball.
  5. Preheat the oven to 350°F (175°C) and bake the cookies for about 12 minutes.
  6. Let cool completely on a wire rack.
  7. Beat together ¼ cup softened butter, powdered sugar, and Captain Morgan Spiced Rum until smooth.
  8. Spoon or pipe the icing into each thumbprint well and dust with ground nutmeg.
  9. Allow the filling to set before serving.
  10. Store cookies in an airtight container.
