These French Salted Butter Cookies are rich, buttery, and melt-in-your-mouth delicious.

- 1 cup (226g) salted butter, softened (preferably European-style)
- 1/2 cup (100g) granulated sugar
- 2 egg yolks, room temperature
- 1 tsp vanilla extract
- 2 cups (250g) all-purpose flour
- 1/2 tsp fine sea salt (optional, depending on your butter)
- Optional: Extra egg yolk + 1 tsp water for egg wash
- Optional: Turbinado or coarse sugar for topping
Instructions
- Beat softened salted butter and granulated sugar for 2–3 minutes until light and fluffy.
- Mix in egg yolks one at a time, then add vanilla and beat until smooth.
- Add flour gradually and mix until a dough forms. Chill for 30 minutes if the dough is very soft.
- Roll dough between parchment to 1/4-inch thickness. Cut into rounds using a cookie cutter. Re-roll scraps as needed.
- Place cut cookies on a lined sheet and chill 20–30 minutes. Preheat oven to 350°F (175°C).
- Optional: Brush tops with egg wash and sprinkle with coarse sugar. Bake 12–15 minutes or until edges are lightly golden. Cool on a wire rack.
