- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 can (14.5 oz) diced tomatoes with juices
- 4 cups low-sodium chicken broth
- 2 cups fresh spinach or kale
- 2 tsp Italian seasoning
- Salt and pepper to taste
- ½ cup freshly grated Parmesan cheese
Instructions
- In a large pot over medium heat, add a splash of olive oil. Sauté the diced onion until translucent.
- Add the Italian sausage to the pot. Break it up with a wooden spoon and cook until browned (about 5–7 minutes).
- Stir in minced garlic, diced carrots, and chopped celery; cook until softened.
- Pour in canned tomatoes and chicken broth. Bring to a gentle simmer.
- Season with Italian seasoning, salt, and pepper. Simmer uncovered for about 20 minutes.
- Fold in spinach or kale until wilted. Serve hot topped with Parmesan cheese.
