Ingredients

- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 parsnips, diced
- 2 medium potatoes, cubed
- 1 sweet potato, cubed
- 1 cup green beans, trimmed and cut into pieces
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 2 cups kale or spinach, chopped
- Fresh parsley, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
- Stir in the sliced carrots, diced parsnips, cubed potatoes, and sweet potato. Cook for another 5 minutes, stirring occasionally.
- Add the green beans to the pot and mix well.
- Add the vegetable broth and canned diced tomatoes. Stir to combine.
- Add the dried thyme, rosemary, smoked paprika, salt, and pepper. Mix well.
- Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 30 minutes, or until the vegetables are tender.
- Stir in the chopped kale or spinach and cook for an additional 5 minutes until the greens are wilted.
- Taste the stew and adjust the seasoning if necessary.
- Ladle the stew into bowls and garnish with fresh parsley before serving.
