- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 cup frozen corn
- 1 cup bell pepper, chopped (any color)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 2 cups shredded cheddar cheese
- 1 cup cooked rice (optional)
- Fresh parsley, for garnish (optional)
Instructions
- Start by preheating your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
- Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.
- Stir in the diced tomatoes (with juice), kidney beans, and frozen corn. Mix well.
- Add the chopped bell pepper, chili powder, cumin, salt, and pepper. Stir to combine all the ingredients.
- If using cooked rice, fold it into the mixture at this stage.
- Pour the beef and vegetable mixture into a greased 9×13-inch baking dish, spreading it evenly.
- Sprinkle the shredded cheddar cheese generously over the top of the casserole.
- Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and golden.
- Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.

- Leftovers can be stored in an airtight container in the refrigerator.
