Description

Hobo Casserole Ground Beef is a hearty dish featuring layers of ground beef, vegetables, and cheese baked to perfection.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup bell pepper, chopped (any color)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1 cup cooked rice (optional)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Start by preheating your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
  3. Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.
  4. Stir in the diced tomatoes (with juice), kidney beans, and frozen corn. Mix well.
  5. Add the chopped bell pepper, chili powder, cumin, salt, and pepper. Stir to combine all the ingredients.
  6. If using cooked rice, fold it into the mixture at this stage.
  7. Pour the beef and vegetable mixture into a greased 9×13-inch baking dish, spreading it evenly.
  8. Sprinkle the shredded cheddar cheese generously over the top of the casserole.
  9. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and golden.
  10. Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
