- 1/2 cup creamy peanut butter
- 1/4 cup granulated sugar, for rolling
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and peanut butter until well combined.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Place the 1/4 cup granulated sugar in a shallow dish.
- Roll the dough into balls, about 1 inch in diameter.
- Roll each dough ball in the sugar until coated.
- Place the sugar-coated balls about 2 inches apart on the prepared baking sheets.
- Using the bottom of a glass or your hand, gently flatten each ball slightly. Then, using a fork, press down in one direction and then the other to create a crisscross pattern.
- Bake for 9-11 minutes, or until the edges are lightly golden and the centers are still slightly soft.
- Let the cookies cool on the baking sheets for 2-3 minutes before transferring them to a wire rack to cool completely.
