- 312 g (2 1/2 cups) all-purpose flour
- 1 tsp (6 g) fine salt
- 1 tbsp (12 g) granulated sugar (optional)
- 226 g (1 cup / 2 sticks) unsalted butter, very cold and cubed
- 90–120 ml (6–8 tbsp) ice water
Instructions
- In a large bowl, whisk together the flour, salt, and sugar until uniform.
- Add the cold, cubed butter and mix until the mixture resembles coarse meal with pea-sized butter pieces.
- Sprinkle ice water over the dough and mix gently until the dough holds together.
- Gather the dough into disks and wrap tightly in plastic. Chill in the refrigerator for 1 hour.
- Roll a disk to a 12-inch circle, transfer to a pie pan, and trim edges.
- Chill or freeze the crust before baking. If blind baking, preheat oven and bake the crust until golden.
Notes
For best results, keep everything cold and avoid overworking the dough. The dough can be made ahead and frozen.
