Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium Yukon gold potatoes, diced
  • 2 medium carrots, chopped
  • 4 cups low-sodium beef broth
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup bacon bits
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until crumbly; drain excess fat.
  2. Add chopped onions and minced garlic to the skillet; sauté until fragrant.
  3. Transfer the beef mixture into a crockpot and add diced potatoes, carrots, and beef broth.
  4. Season with salt and pepper; stir well to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until veggies are tender.
  6. About 30 minutes before serving, stir in heavy cream and shredded cheddar cheese until melted.
  7. Serve in bowls garnished with crispy bacon bits.
