- 1 lb lean ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium Yukon gold potatoes, diced
- 2 medium carrots, chopped
- 4 cups low-sodium beef broth
- 1 cup shredded sharp cheddar cheese
- 1/2 cup bacon bits
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat until crumbly; drain excess fat.
- Add chopped onions and minced garlic to the skillet; sauté until fragrant.
- Transfer the beef mixture into a crockpot and add diced potatoes, carrots, and beef broth.
- Season with salt and pepper; stir well to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until veggies are tender.
- About 30 minutes before serving, stir in heavy cream and shredded cheddar cheese until melted.
- Serve in bowls garnished with crispy bacon bits.
