- 1 tablespoon olive oil
- 1 large yellow onion, diced
- 3 garlic cloves, minced
- 1 medium eggplant, chopped
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 cups cherry tomatoes, halved
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 3 cups vegetable broth
- 1 tablespoon balsamic vinegar
- Fresh basil or parsley, for garnish
Instructions
- Heat olive oil in a soup pot. Sauté diced onion for 5 minutes, then add garlic and cook 1 minute.
- Add eggplant, zucchini, and both bell peppers. Cook 6–8 minutes, adding a splash of broth if needed.
- Stir in cherry tomatoes, tomato paste, oregano, thyme, and rosemary. Cook 4–5 minutes.
- Add vegetable broth. Bring to a boil, reduce heat, and simmer for 20 minutes.
- Add balsamic vinegar, then blend using an immersion or standard blender until smooth or partially chunky.
- Ladle hot soup into bowls and garnish with basil or parsley.
