Ingredients

  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 1 medium eggplant, chopped
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 cups cherry tomatoes, halved
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 3 cups vegetable broth
  • 1 tablespoon balsamic vinegar
  • Fresh basil or parsley, for garnish

Instructions

  1. Heat olive oil in a soup pot. Sauté diced onion for 5 minutes, then add garlic and cook 1 minute.
  2. Add eggplant, zucchini, and both bell peppers. Cook 6–8 minutes, adding a splash of broth if needed.
  3. Stir in cherry tomatoes, tomato paste, oregano, thyme, and rosemary. Cook 4–5 minutes.
  4. Add vegetable broth. Bring to a boil, reduce heat, and simmer for 20 minutes.
  5. Add balsamic vinegar, then blend using an immersion or standard blender until smooth or partially chunky.
  6. Ladle hot soup into bowls and garnish with basil or parsley.
