Description

Ingredients

  • 4 large sweet potatoes (about 2 pounds)
  • 1/2 cup maple syrup
  • 1/2 cup brown sugar
  • 1/2 cup milk (whole, almond, or oat)
  • 1/4 cup unsalted butter (or vegan butter)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped pecans (optional)

Instructions

  1. Peel and chop the sweet potatoes into chunks. Place them in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes, or until fork-tender. Drain and let cool slightly.
  2. Mash the cooked sweet potatoes until smooth using a potato masher or hand mixer.
  3. Add maple syrup, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, and salt to the mashed sweet potatoes. Whisk until smooth and creamy.
  4. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  5. Pour the sweet potato mixture into the prepared baking dish and spread evenly. Sprinkle chopped pecans on top if using.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden and edges are bubbly.
