Ingredients
Scale
- 4 large sweet potatoes (about 2 pounds)
- 1/2 cup maple syrup
- 1/2 cup brown sugar
- 1/2 cup milk (whole, almond, or oat)
- 1/4 cup unsalted butter (or vegan butter)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup chopped pecans (optional)
Instructions
- Peel and chop the sweet potatoes into chunks. Place them in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes, or until fork-tender. Drain and let cool slightly.
- Mash the cooked sweet potatoes until smooth using a potato masher or hand mixer.
- Add maple syrup, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, and salt to the mashed sweet potatoes. Whisk until smooth and creamy.
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or cooking spray.
- Pour the sweet potato mixture into the prepared baking dish and spread evenly. Sprinkle chopped pecans on top if using.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and edges are bubbly.
Notes
- For a vegan version, use plant-based milk and vegan butter.
- Adjust the sweetness by reducing brown sugar if desired.
