Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 4 chicken drumsticks, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 carrot, sliced
  • 1 cup mushrooms, sliced
  • 1 can (14 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 cup dry red wine
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken thighs and drumsticks dry with paper towels. Season generously with salt and pepper.
  2. In a large, heavy-bottomed pot, heat olive oil over medium-high heat. Add the chicken pieces, skin-side down, and sear until golden brown, about 5-7 minutes per side. Remove and set aside.
  3. In the same pot, add the diced onion, garlic, bell pepper, carrot, and mushrooms. Sauté until softened, around 5-7 minutes.
  4. Pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow it to simmer for 2-3 minutes to reduce slightly.
  5. Stir in the diced tomatoes and chicken broth. Bring the mixture to a gentle simmer.
  6. Add the dried oregano and basil, mixing well. Taste and adjust seasoning with salt and pepper as needed.
  7. Nestle the browned chicken pieces back into the pot, skin-side up.
  8. Cover the pot with a lid and let it simmer on low heat for about 45-60 minutes, or until the chicken is cooked through and tender.
  9. Remove the lid for the last 10 minutes to allow the sauce to thicken slightly.
  10. Garnish with freshly chopped parsley before serving.
