- 4 chicken thighs, bone-in and skin-on
- 4 chicken drumsticks, bone-in and skin-on
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 carrot, sliced
- 1 cup mushrooms, sliced
- 1 can (14 ounces) diced tomatoes
- 1 cup chicken broth
- 1 cup dry red wine
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the chicken thighs and drumsticks dry with paper towels. Season generously with salt and pepper.
- In a large, heavy-bottomed pot, heat olive oil over medium-high heat. Add the chicken pieces, skin-side down, and sear until golden brown, about 5-7 minutes per side. Remove and set aside.
- In the same pot, add the diced onion, garlic, bell pepper, carrot, and mushrooms. Sauté until softened, around 5-7 minutes.
- Pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow it to simmer for 2-3 minutes to reduce slightly.
- Stir in the diced tomatoes and chicken broth. Bring the mixture to a gentle simmer.
- Add the dried oregano and basil, mixing well. Taste and adjust seasoning with salt and pepper as needed.
- Nestle the browned chicken pieces back into the pot, skin-side up.
- Cover the pot with a lid and let it simmer on low heat for about 45-60 minutes, or until the chicken is cooked through and tender.
- Remove the lid for the last 10 minutes to allow the sauce to thicken slightly.
- Garnish with freshly chopped parsley before serving.
