- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon red pepper flakes (optional)
- 4 cups low-sodium chicken broth
- 1 cup water
- 1 head of cabbage, cored and chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside.
- Add chopped onion to the pot and cook until softened, about 5-7 minutes.
- Stir in minced garlic, dried thyme, dried rosemary, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Pour in chicken broth and water. Bring to a simmer.
- Add chopped cabbage and diced tomatoes to the pot. Return the cooked Italian sausage to the pot.
- Bring the stew back to a simmer, then reduce heat, cover, and cook for 20-25 minutes, or until cabbage is tender.
- Season with salt and freshly ground black pepper to taste. Serve hot.
Notes
- For a spicier stew, add more red pepper flakes.
- You can substitute kale or other leafy greens for cabbage.
