Description

This Italian Sausage Cabbage Stew is a hearty and flavorful dish perfect for a comforting meal. It combines savory Italian sausage with tender cabbage and a blend of spices for a satisfying stew.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 head of cabbage, cored and chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside.
  2. Add chopped onion to the pot and cook until softened, about 5-7 minutes.
  3. Stir in minced garlic, dried thyme, dried rosemary, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Pour in chicken broth and water. Bring to a simmer.
  5. Add chopped cabbage and diced tomatoes to the pot. Return the cooked Italian sausage to the pot.
  6. Bring the stew back to a simmer, then reduce heat, cover, and cook for 20-25 minutes, or until cabbage is tender.
  7. Season with salt and freshly ground black pepper to taste. Serve hot.

Notes

  • For a spicier stew, add more red pepper flakes.
  • You can substitute kale or other leafy greens for cabbage.
