  • 1 teaspoon Salt (essential for flavoring)
  • 1/2 teaspoon Black Pepper (adjust to taste)
  • 2 pieces Jalapenos (remove seeds for milder heat)
  • 2 pieces Peaches (fresh or canned, drained)
  • 1/4 cup Honey (or brown sugar as alternative)
  • 2 tablespoons Apple Cider Vinegar (white vinegar can be used)
  • 1/4 cup Water (for glaze consistency)
  • 1 tablespoon Cornstarch (can use arrowroot for gluten-free)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set aside.
  6. Cook the diced jalapenos and peaches in the same skillet for 2-3 minutes until softened.
  7. Whisk together honey, apple cider vinegar, water, and cornstarch in a bowl until smooth.
  8. Pour the honey mixture over the jalapenos and peaches, stirring well, and bring to a simmer.
  9. Return the chicken to the skillet, spooning the sauce over it.
  10. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through (165°F internal temperature).
  11. Rest the chicken for a few minutes before serving, then spoon the remaining sauce over the top.
