- 2 pieces Jalapenos (remove seeds for milder heat)
- 2 pieces Peaches (fresh or canned, drained)
- 1/4 cup Honey (or brown sugar as alternative)
- 2 tablespoons Apple Cider Vinegar (white vinegar can be used)
- 1/4 cup Water (for glaze consistency)
- 1 tablespoon Cornstarch (can use arrowroot for gluten-free)
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and black pepper on both sides.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside.
- Cook the diced jalapenos and peaches in the same skillet for 2-3 minutes until softened.
- Whisk together honey, apple cider vinegar, water, and cornstarch in a bowl until smooth.
- Pour the honey mixture over the jalapenos and peaches, stirring well, and bring to a simmer.
- Return the chicken to the skillet, spooning the sauce over it.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through (165°F internal temperature).
- Rest the chicken for a few minutes before serving, then spoon the remaining sauce over the top.
