Description

These Korean Fried Noodles are a bold, gochujang-infused comfort meal made with chewy noodles, tender chicken, crisp veggies, and a spicy-sweet sauce. It’s a quick one-pan dinner that delivers big Korean-inspired flavor in under 30 minutes.


Ingredients

  • 8 oz noodles (ramen, udon, or egg noodles)
  • 1 tablespoon vegetable oil
  • 1 lb boneless chicken breast or thighs, thinly sliced
  • 1 small onion, thinly sliced
  • 1 medium carrot, julienned
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • Green onions and sesame seeds, for garnish
  • 3 tablespoons gochujang chili paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar (or lime juice)
  • 1 teaspoon sesame oil (optional)

Instructions

  1. Cook noodles according to package directions until just tender. Drain well and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook 4–5 minutes, stirring, until browned and cooked through.
  3. Add onion, carrot, and bell pepper. Stir-fry 2–3 minutes until tender-crisp. Add garlic and cook 30 seconds until fragrant.
  4. Add gochujang, soy sauce, honey, and rice vinegar. Stir well and let the sauce toast in the pan for 20–30 seconds to deepen flavor.
  5. Add cooked noodles and toss until evenly coated. If needed, add a splash of water or broth to loosen the sauce.
  6. Drizzle with sesame oil (optional). Remove from heat and garnish with green onions and sesame seeds. Serve hot.
