Description
These Korean Fried Noodles are a bold, gochujang-infused comfort meal made with chewy noodles, tender chicken, crisp veggies, and a spicy-sweet sauce. It’s a quick one-pan dinner that delivers big Korean-inspired flavor in under 30 minutes.

- 8 oz noodles (ramen, udon, or egg noodles)
- 1 tablespoon vegetable oil
- 1 lb boneless chicken breast or thighs, thinly sliced
- 1 small onion, thinly sliced
- 1 medium carrot, julienned
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- Green onions and sesame seeds, for garnish
- 3 tablespoons gochujang chili paste
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar (or lime juice)
- 1 teaspoon sesame oil (optional)
Instructions
- Cook noodles according to package directions until just tender. Drain well and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook 4–5 minutes, stirring, until browned and cooked through.
- Add onion, carrot, and bell pepper. Stir-fry 2–3 minutes until tender-crisp. Add garlic and cook 30 seconds until fragrant.
- Add gochujang, soy sauce, honey, and rice vinegar. Stir well and let the sauce toast in the pan for 20–30 seconds to deepen flavor.
- Add cooked noodles and toss until evenly coated. If needed, add a splash of water or broth to loosen the sauce.
- Drizzle with sesame oil (optional). Remove from heat and garnish with green onions and sesame seeds. Serve hot.
