Description
These Linzer cookies are a classic holiday treat. They feature a delicate shortbread cookie with a fruit jam filling, sandwiched together and dusted with powdered sugar. This recipe is easy to follow and perfect for your holiday baking.

- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fruit jam (raspberry, apricot, or strawberry)
- Powdered sugar for dusting
Instructions
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the flour, mixing until just combined to form a dough.
- Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- On a lightly floured surface, roll out one disc of dough to about 1/4 inch thickness.
- Use cookie cutters to cut out shapes for the bottom cookies. Place them on the prepared baking sheets.
- Roll out the second disc of dough and cut out shapes. For half of these top cookies, use a smaller cutter to create a window in the center.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
- Once cooled, spread jam onto the bottom cookies.
- Dust the top cookies with the window cutouts with powdered sugar.
- Place the powdered top cookies onto the jam-filled bottom cookies to create the Linzer cookies.
