Description

These Linzer cookies are a classic holiday treat. They feature a delicate shortbread cookie with a fruit jam filling, sandwiched together and dusted with powdered sugar. This recipe is easy to follow and perfect for your holiday baking.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup fruit jam (raspberry, apricot, or strawberry)
  • Powdered sugar for dusting

Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. Gradually add the flour, mixing until just combined to form a dough.
  4. Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
  5. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. On a lightly floured surface, roll out one disc of dough to about 1/4 inch thickness.
  7. Use cookie cutters to cut out shapes for the bottom cookies. Place them on the prepared baking sheets.
  8. Roll out the second disc of dough and cut out shapes. For half of these top cookies, use a smaller cutter to create a window in the center.
  9. Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  10. Once cooled, spread jam onto the bottom cookies.
  11. Dust the top cookies with the window cutouts with powdered sugar.
  12. Place the powdered top cookies onto the jam-filled bottom cookies to create the Linzer cookies.
