  • 1 lb (450g) beef or chicken, cut into bite-sized pieces
  • 2 tablespoons Massaman curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef or chicken broth
  • 2 medium potatoes, diced
  • 1 onion, sliced
  • 3 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon tamarind paste (optional)
  • ½ cup roasted peanuts
  • Fresh cilantro or Thai basil for garnish
  • Lime wedges, for serving
  • Cooked jasmine rice, for serving

Instructions

  1. Gather all your ingredients and cut the meat, potatoes, and onion as specified.
  2. Heat a tablespoon of oil in a large pot or Dutch oven over medium heat.
  3. Add the beef or chicken to the pot. Sauté until browned on all sides, about 5-7 minutes.
  4. Stir in the sliced onion and cook until softened, about 3-4 minutes.
  5. Add the Massaman curry paste to the pot. Stir well to coat the meat and onions, cooking for about 2 minutes until fragrant.
  6. Slowly add the coconut milk and broth, stirring to combine all ingredients.
  7. Toss in the diced potatoes and bring the mixture to a boil.
  8. Stir in the fish sauce, brown sugar, and tamarind paste (if using).
  9. Reduce the heat to low, cover, and let the curry simmer for about 45 minutes, or until the meat and potatoes are tender.
  10. Stir in the roasted peanuts during the last 10 minutes of cooking for added crunch and flavor.
  11. Check the seasoning and adjust with more fish sauce or sugar if desired.
  12. Remove from heat and let it sit for a few minutes before serving.
