- 1 lb (450g) beef or chicken, cut into bite-sized pieces
- 2 tablespoons Massaman curry paste
- 1 can (13.5 oz) coconut milk
- 1 cup beef or chicken broth
- 2 medium potatoes, diced
- 1 onion, sliced
- 3 tablespoons fish sauce
- 2 tablespoons brown sugar
- 1 tablespoon tamarind paste (optional)
- ½ cup roasted peanuts
- Fresh cilantro or Thai basil for garnish
- Lime wedges, for serving
- Cooked jasmine rice, for serving
Instructions
- Gather all your ingredients and cut the meat, potatoes, and onion as specified.
- Heat a tablespoon of oil in a large pot or Dutch oven over medium heat.
- Add the beef or chicken to the pot. Sauté until browned on all sides, about 5-7 minutes.
- Stir in the sliced onion and cook until softened, about 3-4 minutes.
- Add the Massaman curry paste to the pot. Stir well to coat the meat and onions, cooking for about 2 minutes until fragrant.
- Slowly add the coconut milk and broth, stirring to combine all ingredients.
- Toss in the diced potatoes and bring the mixture to a boil.
- Stir in the fish sauce, brown sugar, and tamarind paste (if using).
- Reduce the heat to low, cover, and let the curry simmer for about 45 minutes, or until the meat and potatoes are tender.
- Stir in the roasted peanuts during the last 10 minutes of cooking for added crunch and flavor.
- Check the seasoning and adjust with more fish sauce or sugar if desired.
- Remove from heat and let it sit for a few minutes before serving.
