- 2 eggs (cooked to your preference—scrambled, fried, or poached)
- 2 slices of whole-grain bread (or any bread of your choice)
- 2 tbsp feta cheese, crumbled
- 1 tbsp Kalamata olives, chopped
- ½ tomato, sliced
- Fresh spinach or arugula
- 1 tsp olive oil (for sautéing the veggies)
- 1 tsp dried oregano (optional, for extra flavor)
- Salt and pepper, to taste
Instructions
- Start by toasting two slices of whole-grain bread until crispy and golden.
- In a skillet, heat a teaspoon of olive oil over medium heat. Add spinach (or arugula) and sauté for 1–2 minutes until wilted. Remove from heat.
- In the same skillet, scramble or fry two eggs. Season with salt, pepper, and optional dried oregano.
- On one slice of bread, layer sautéed spinach, eggs, sliced tomato, olives, and crumbled feta cheese. Top with the second slice of bread.
- Cut the sandwich in half for easy eating and serve immediately. You can also pack it for a Mediterranean breakfast to go if needed.
