- 2 cups corn (fresh, frozen, or canned)

- 1/2 cup mayonnaise
- 1/4 cup sour cream
- Juice of 1 lime
- 1/2 cup crumbled queso fresco or feta cheese
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
Instructions
- If using a grill, preheat it to medium-high heat. If baking, preheat your oven to 400°F (200°C).
- Prepare the Chicken: Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Make sure to coat evenly for maximum flavor.
- Cook the Chicken: Grilling: Place the seasoned chicken on the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Baking: Place the seasoned chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
- Prepare the Corn Mixture: While the chicken is cooking, heat olive oil in a skillet over medium heat. Add the corn and cook for about 5-7 minutes, stirring occasionally, until slightly charred.
- Mix Dressing: In a small bowl, combine mayonnaise, sour cream, lime juice, and a pinch of salt. Mix until smooth.
- Combine Ingredients: Once the corn is cooked, remove it from the heat and add it to the dressing mixture. Stir in crumbled queso fresco and chopped cilantro.
