- 1 cup graham cracker crumbs
- 2 tablespoons sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of a muffin tin lined with cupcake liners.
- In a separate bowl, beat the cream cheese and sugar until smooth.
- Add eggs, vanilla extract, and sour cream, mixing until fully incorporated.
- Divide the mixture over the crusts, filling each about 2/3 full.
- In a small bowl, mix cinnamon and brown sugar, then sprinkle on top of the cheesecakes.
- Bake for 18-20 minutes until set, then allow to cool.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
These mini cheesecakes are best served chilled and can be topped with whipped cream for extra flavor.
