Description

Delicious mini cheesecakes with a cinnamon roll twist, perfect for any dessert lover.


Ingredients

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of a muffin tin lined with cupcake liners.
  4. In a separate bowl, beat the cream cheese and sugar until smooth.
  5. Add eggs, vanilla extract, and sour cream, mixing until fully incorporated.
  6. Divide the mixture over the crusts, filling each about 2/3 full.
  7. In a small bowl, mix cinnamon and brown sugar, then sprinkle on top of the cheesecakes.
  8. Bake for 18-20 minutes until set, then allow to cool.
  9. Chill in the refrigerator for at least 2 hours before serving.

Notes

These mini cheesecakes are best served chilled and can be topped with whipped cream for extra flavor.
