- 1 (3.4 oz) instant pistachio pudding mix
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup whole milk (or buttermilk)
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup chopped pistachios (unsalted or lightly salted)
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
- Crushed pistachios for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together the flour, sugar, pistachio pudding mix, baking powder, baking soda, and salt.
- In a separate bowl, whisk the eggs, milk, vegetable oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing.
- Stir in the chopped pistachios until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a cooling rack.
- Mix powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled loaf and top with crushed pistachios.
