  • 1 (3.4 oz) instant pistachio pudding mix
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 2 large eggs
  • 1 cup whole milk (or buttermilk)
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pistachios (unsalted or lightly salted)
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Crushed pistachios for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, pistachio pudding mix, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk the eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing.
  5. Stir in the chopped pistachios until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a cooling rack.
  9. Mix powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled loaf and top with crushed pistachios.
