- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced chicken to the pot and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through.
- Stir in the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
- Pour in the chicken broth and bring to a boil. Once boiling, add the orzo pasta and stir to combine.
- Reduce the heat to low and cover the pot. Let it simmer for about 10-12 minutes, or until the orzo is al dente and has absorbed most of the liquid.
- Stir in the cherry tomatoes, chopped spinach, oregano, and basil. Cook for an additional 2-3 minutes, until the spinach wilts and the tomatoes soften.
- Taste the dish and adjust seasoning as needed.
- Remove from heat and let it sit for a couple of minutes. Garnish with fresh parsley before serving.
