Ingredients

  • 1 ripe peach, peeled and chopped (or ¾ cup frozen peaches, thawed)
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup (optional, to taste)
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • 1 tablespoon water (optional, to thin)

Instructions

  1. Peel, pit, and chop the peach. If using frozen, thaw for about 10 minutes.
  2. Combine peach, olive oil, vinegar, Dijon mustard, and honey or maple syrup in a blender or food processor.
  3. Blend for 30–60 seconds until creamy. Add water as needed for desired consistency.
  4. Add salt and pepper to taste, then blend again briefly to combine.
  5. Pour into an airtight jar or bottle and refrigerate. Shake before each use.
