A Moist and Comforting Twist on Classic Quick Bread


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil (or melted butter)
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups peeled and grated ripe pears (about 2 medium-large pears)
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins or dried cranberries
  • 1/2 teaspoon ground ginger
  • Coarse sugar for topping

Instructions

  1. Set your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, whisk granulated sugar, brown sugar, and oil until smooth. Add the eggs one at a time, whisking well. Stir in vanilla.
  3. Fold in the grated pears. Lightly drain excess liquid if pears are extremely juicy, but do not squeeze them dry.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gently fold dry ingredients into the wet batter. Do not overmix. Stir in nuts or dried fruit if using.
  6. Transfer batter to the loaf pan and smooth the top. Bake 55–65 minutes or until a toothpick comes out clean.
  7. Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack to cool fully before slicing.
