  • 1 cup peppermint chocolate kisses (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the peppermint chocolate kisses gently into the dough.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are set.
  9. Remove the cookies from the oven and immediately press a peppermint kiss into the center of each cookie. Allow to cool on the baking sheet for about 5 minutes.
  10. Transfer the cookies to a wire rack to cool completely.
