Instructions
- Preheat your oven to 350℉ and line a cupcake pan with 24 festive cupcake liners.
- Cream together the sugar and softened butter in a mixing bowl until fluffy and light in color; add in the eggs, milk, and vanilla—mix until combined and smooth.
- Combine the dry ingredients in a separate bowl: flour, baking powder, and salt. Gradually mix this dry blend into your wet mixture, alternating with the champagne.
- Color the batter by adding pink food coloring until desired shade. Fill each cupcake liner about ⅔ full with the batter.
- Bake for 14-17 minutes. The cupcakes are done when a toothpick inserted in the center comes out clean.
- Prepare the frosting by simmering champagne in a saucepan until it reduces by half. Cool before beating it with softened butter and confectioners’ sugar.
- Frost the cooled cupcakes with champagne buttercream and decorate with pink decorations or edible glitter.
