Description

Delight in the festive spirit with Pink Champagne Cupcakes, perfect for celebrations and customizable with your favorite sparkling wine.

Ingredients

Scale
  • 1 cup White Sugar
  • 1/2 cup Butter (softened)
  • 2 large Eggs
  • 1 tablespoon Pure Vanilla Extract
  • 1/2 cup Milk
  • 2 cups All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1 tablespoon Baking Powder
  • 1 cup Champagne
  • 1 teaspoon Pink Food Coloring or Icing Gel
  • 1/2 cup Butter (softened)
  • 2 cups Confectioners’ Sugar
  • 1/4 cup Champagne
  • 1 teaspoon Pure Vanilla Extract
  • 1 tablespoon Milk

Instructions

  1. Preheat your oven to 350℉ and line a cupcake pan with 24 festive cupcake liners.
  2. Cream together the sugar and softened butter in a mixing bowl until fluffy and light in color; add in the eggs, milk, and vanilla—mix until combined and smooth.
  3. Combine the dry ingredients in a separate bowl: flour, baking powder, and salt. Gradually mix this dry blend into your wet mixture, alternating with the champagne.
  4. Color the batter by adding pink food coloring until desired shade. Fill each cupcake liner about ⅔ full with the batter.
  5. Bake for 14-17 minutes. The cupcakes are done when a toothpick inserted in the center comes out clean.
  6. Prepare the frosting by simmering champagne in a saucepan until it reduces by half. Cool before beating it with softened butter and confectioners’ sugar.
  7. Frost the cooled cupcakes with champagne buttercream and decorate with pink decorations or edible glitter.

Notes

  • Feel free to replace white sugar with brown sugar for a hint of caramel flavor.
  • Using unsalted butter gives you better control over the saltiness.
  • Room temperature eggs help achieve a fluffier texture.
  • Almond extract can be substituted for a delightful twist.
  • Substitute with gluten-free flour for a gluten-free option.
  • Omit salt if using salted butter.
  • Prosecco or Cava are excellent alternatives for champagne.
  • Feel free to skip food coloring for a more classic appearance.
