  • 4 catfish fillets
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional for spice)
  • Cooking spray or melted butter for greasing

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a baking dish by spraying it with cooking spray or greasing it with melted butter.
  2. Place the catfish fillets in a shallow dish and pour the buttermilk over them. Allow the fish to soak for about 10-15 minutes.
  3. In a separate bowl, combine the cornmeal, flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).
  4. Remove the fillets from the buttermilk, allowing any excess to drip off. Dredge each fillet in the cornmeal mixture until well coated.
  5. Place the coated fillets in the prepared baking dish, ensuring they are spaced evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the fish is cooked through and the coating is golden brown and crispy.
  7. The fish should flake easily with a fork and reach an internal temperature of 145°F (63°C).
  8. Once done, remove the baking dish from the oven and allow the fish to rest for a few minutes before serving.
